Tried my 1st eelpout - cleaned the big boy, boiled some, not to bad! Put the rest of the fillets in cold salt water in the fridge for 24hrs and in turned real soft and slimmy, cooked some again and it changed to a mushy texture, any ideas on what happened?
There's an eelpout recipe out there called "MN Lobster." I don't recall exactly, but I think it's as easy as boiling cubed eelpout in a citrus soda (Sprite, 7up) and then dipping the chunks in melted butter.
