1st off welcome george77. Your question may be one of the main reasons this site was developed!!!!! The answer to your question can vary from what part of the state, time of the year, how big the lake is, is there a river flowing through it, walking, ATV, driving small cars or big trucks, fish houses, can you get around because of deep snow, slush on the lake, how thick is the ice, do I need and extension for my ice auger, are there any roads plowed yet, who's renting fish houses, the questions can go on and on depending on where you are fishing.
But here is a basic timelime:

Northern MN ices up 1st, usually about the 2nd week in Nov.
Central MN goes next, about the 1st week in Dec.
Southern MN is last, late Dec.

The bays and small lakes are usually the 1st place people venture out by foot, then ATVs and snowmobiles, cars, trucks, and so on, as the ice thickens.

Usually, the ice is pretty good most places after Jan 1st. But this is just kind of an estimate based on a lifetime of experience on when to be able to go out "safely". And can be adjusted earlier with real cold temps early, or some years its seemed that we really never got any real good ice to be out on, especially here in the metro area or further south. Every year is different, so ask here, and people will let you know if they know. But remember this: THE ICE IS NEVER 100% SAFE SO ALWAYS BE CAREFUL AND CHECK IT YOURSELF!!!!
