Any one have some good recipes for fish, grouse or pheasants?
I don't know many. I do make Pheasant fajita's because I can do this when camping. I grill all my fish. Well.. I wouldn't ask for recipes if I was unwilling to give mine up. I know it's not much of a recipe, but it's one of the few things I make besides the fish. For fish I just grill em with a lot of butter, some salt, pepper and a few spices.
Pheasant Fajitas you'll need 3/4" wide strips of breast Heat a few tablespoons of olive oil add the pheasant strips as well as a slivered onion into the hot oil cook until onions turn transparent Add sliced peppers (I use yellow, green and red) heat at medium while stirring stir in favorite fajita seasoning crank heat to high and mix in 1/4 cup of hot water Stir until the water evaporates Put it in a tortilla. I like sour cream.
Marinate the breast(s) for a short while in Italian dressing. Then cut them up into smaller pieces. Take a piece of bacon and wrap the piece of Goose in it and use tooth picks to hold the bacon on. Then toss onto the grill. When the bacon is done, its time to eat!
